California Grilled Chicken

California Grilled Chicken is a quick and simple recipe that can be made in big quantities to keep your guests satisfied.

Ingredients:

-3/4 c. balsamic vinegar

-1 tsp. garlic powder

-2 tbsp. extra-virgin olive oil

-2 tsp. Italian seasoning

-Kosher salt

-Freshly ground black pepper

-4 boneless skinless chicken breasts

-4 slices avocado

-4 slices tomato

-4 slices mozzarella

-2 tbsp. freshly sliced basil, for garnish

- Balsamic glaze, for drizzling

Method:

In a small bowl, whisk together balsamic vinegar, garlic powder, honey, oil, and Italian seasoning and season with salt and pepper. Pour over chicken and marinate 20 minutes. Once you are ready to grill, heat grill to medium-high flame. Oil grates and grill chicken until charred and cooked through, 8 minutes per side. Top chicken with mozzarella, avocado, and tomato and cover grill to melt, 2 minutes. Garnish with basil and drizzle with balsamic glaze.

-1 jalapeno *roasted and diced

- ½ medium red onion *diced

-2-3 medium cloves of garlic * minced or crushed

-2 Roma tomatoes *diced

- 2 small or 1 large bunch cilantro * chopped

- Salt and pepper for taste

-2 cups low sugar lemonade

½ cup Blue Ice Potato Vodka

Method:  Add both the lemonade and vodka to a pitcher and stir until mixed well. Pour the mixture into each Popsicle pouch and seal.  Freeze the popsicles overnight.
